Hot Chicken Salad

  • 2 cups diced cooked chicken

  • 1 1/2 cups diced celery

  • 1/2 cup slivered almonds, toasted

  • 2 hard-cooked eggs, chopped

  • 1 tbs chopped onion

  • 1 cup mayonnaise

  • 1 1/2 tsp grated lemon rind

  • 2 tsp lemon juice

  • 1/2 tsp ground black pepper

  • 1 1/2 cups shredded sharp Cheddar cheese

  • 1 1/2 cups crushed potato chips

Combine first 9 ingredients in a large bowl; mix well. Spoon chicken mixture into a lightly greased shallow 2 quart casserole; sprinkle with cheese and top with potato chips. Bake at 375 F. for 25 minutes.

Yield: 6 Servings.
