Curried Eggs Salad 

  • 6 hard-cooked eggs, cooled and peeled

  • cup yogurt, mayonnaise or reduced-fat mayonnaise

  • 1 teaspoons curry powder

  • teaspoon sugar

  • Salt and Pepper to taste

  • 1/3 cup chopped apple

  • cup minced green onion

  • cup finely chopped celery

  • cup raisins or chopped peanuts 

Dice eggs and place in a medium. In a small bowl, combine yogurt or mayo, curry, sugar and salt and pepper and mix well. Stir into diced eggs. Fold in apple, green onions, celery and raisins or peanuts. Taste to adjust seasoning and shill until ready to serve.

Yield: 4 to 6 servings.
