Brown Garlic Sauce

  • 1/2 cup oil

  • 1/4 cup all-purpose flour

  • 2 tablespoons chopped garlic

  • 2 cups milk

  • 1 cup clam juice

  • 4 tablespoons chopped green onion

  • 1 tablespoon Worcestershire sauce

  • 2 tablespoon parsley

  • 1 teaspoon Tabasco sauce

  • 1/4 teaspoon thyme

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon salt

In a medium sauce pan, combine oil, flour and garlic and cook over medium hear, stirring constantly until roux is brown. Add remaining ingredients. Stir often. Do not allow sauce to boil.
Serve over grill or raw oyster.
Yield: 8 servings
