Blend ¾ cup
sugar, the flour, and salt thoroughly in tip of double boiler.
Add 1-cup milk, stirring to make smooth. Add remaining milk,
cook, and stirring frequently until thickened. Cover and cook
15 minutes. Beat egg yolks slightly; slowly add hot custard.
Return to double boiler, cook 2 minutes. Remove from heat and
add vanilla. Line the bottom and sides of a 2 qt casserole
with vanilla wafers. Arrange bananas on wafers. Pour custard
over bananas, and make another layer, repeating according to
size of baking dish. Beat egg whites stiff but not dry. Add
remaining sugar 1 TBSP at a time, beating constantly. Spread
meringue over custard. Bake for 15 minutes at 30 degrees.
