Banana Blueberry Muffins

  • 2/3-cup milk

  • cup vegetable oil

  • cup mashed, ripe banana

  • 1 medium egg

  • 2 cups flour

  • cup sugar

  • 1 teaspoons baking powder

  • 1-teaspoon vanilla

  • 1 cup fresh or frozen blueberries, thawed and drained 

Preheat oven to 400 degrees. Beat milk, oil, banana and egg in large bowl with fork. Stir in remaining ingredients, except the blueberries until flour is moistened. Fold in berries. Divide batter evenly in greased muffin pan. Bake 10 to 20 minutes or until golden brown. Remove from pan immediately.

Yield: 12
